Watermelon Salad with Plant-Based Greek Style Cubes

A version of the delicious Watermelon Summer Salad but plant-based, with our new Nurishh Greek Style Cubes made with our Nurishh Plant-Based Cubes.

Ingredients

1 red onion thinly sliced

1/2 lemon juiced

2tbsp pine nuts

1 baby watermelon cut into bite sized chunks

1 cucumber, peeled deseeded and cut into bite size chunks

100g kalamata olives, pitted and halved

150g Nurishh Greek Style Cubes

1 handful mint leaves

4tbsp Extra virgin olive oil

S & P to season

Method

Toss the onion in the lemon juice with a pinch of salt and leave to marinate for a few minutes.

In a small frying pan, dry fry the nuts over a medium heat for a few minutes until lightly toasted.

Toss the watermelon, onion, cucumber and olives together in a serving bowl. Scatter over the pine nuts, Nurishh Greek Style Cubes and mint leaves, drizzle over the olive oil and serve.
