Mozzarella Style Salad

Enjoy a delicious dairy-free version of a mozzarella, tomato and rocket salad made with our Nurishh Mozzarella Style Blocks.



300g Spaghetti
1 courgette, grated
2 Big handfuls rocket leaves
200g Cherry tomatoes on the vine, halved
130g fresh green pesto
Nurishh Mozzarella Block, cut into dice sized cubes

  1. Bring a large saucepan of boiling water to the boil.
  2. Add the Spaghetti and cook for 10-12 minutes until al dente.
  3. Add the courgette for the last minute.
  4. Strain and rinse under cold water for a minute or so to get rid of the starch and cool down the pasta.
  5. Put back into the pan with 2 tsp extra virgin olive oil and the pesto and mix thoroughly.
  6. Next, toss in the rocket, tomatoes and Nurishh Mozzarella Block cubes
  7. Serve with crusty bread.
