Mozzarella Style Salad
Enjoy a delicious dairy-free version of a mozzarella, tomato and rocket salad made with our Nurishh Mozzarella Style Blocks.
1 courgette, grated
2 Big handfuls rocket leaves
200g Cherry tomatoes on the vine, halved
130g fresh green pesto
Nurishh Mozzarella Block, cut into dice sized cubes

Mozzarella Style Blocks
- Bring a large saucepan of boiling water to the boil.
- Add the Spaghetti and cook for 10-12 minutes until al dente.
- Add the courgette for the last minute.
- Strain and rinse under cold water for a minute or so to get rid of the starch and cool down the pasta.
- Put back into the pan with 2 tsp extra virgin olive oil and the pesto and mix thoroughly.
- Next, toss in the rocket, tomatoes and Nurishh Mozzarella Block cubes
- Serve with crusty bread.
